H&S Family of Bakeries

The H&S Family of Bakeries are a network of 10 bakeries and multiple distribution centers along the East Coast, all committed to one thing: producing the best quality bread products possible. H&S Family of Bakeries includes Northeast Foods, H&S Bakery and Schmidt Baking Co. Together, our baked goods can be found in a wide range of establishments, from fast food and quick-service restaurants to cafeterias, hospitals, grocery stores and universities.

The Muffin Mixer is responsible for mixing and scaling muffin dough to ensure dough to ensure proper consistency. This role will oversee the proofing and baking process, maintain accurate lot traceability records, and ensure adherence to production standards. The duties are varied and require the employee to perform a multitude of tasks. This position requires strong attention to detail, adherence to all food and safety protocols, and effective communication with team members.

Role & Responsibilities:


  • Verify that the dough sheet and computer running order match before starting a shift; report discrepancies immediately.
  • Communicate with the outgoing mixer to ensure a seamless transition between shifts.
  • Check the production schedule and ensure the correct product is being mixed and scaled.
  • Monitor the mixing process from the first stage to completion, ensuring proper consistency and specifications.
  • Verify dough scaling weight and adjust as necessary to meet product standards.
  • Accurately record all product details, including lot number, dates, weights, and initialed records.
  • Monitor and adjust the cornmeal feeder to ensure proper coating for proofing.
  • Oversee the entire production process, including the mixer, Vemag, proofer, and griddle, reporting any issues.
  • Maintain continuous dough production to prevent stoppages and ensure consistent product quality.
  • Regularly check and adjust dough temperature based on seasonal variations.
  • Properly handle and recycle dough scraps and cornmeal to minimize waste.
  • Keep workstation clean and organized throughout the shift, ensuring all tools and ingredients are stored properly.
  • Follow safety procedures at all times, including proper machine handling and Lockout/Tagout protocols when maintenance is required.

Education & Experience:


  • High school diploma or equivalent preferred.
  • Previous experience in a food production or bakery environment is a plus.

Skills & Abilities:


  • Ability to follow detailed instructions and production procedures.
  • Basic math skills for scaling and measuring ingredients.
  • Strong attention to detail and ability to monitor quality control standards.
  • Ability to work in a fast-paced production environment with minimal supervision.
  • Strong communication skills to effectively relay information to supervisors and team members.

Physical Requirements:


  • Ability to lift and carry up to 50 lbs regularly.
  • Stand, walk, and perform repetitive motions for extended periods.
  • Work in a warm/humid environment due to production conditions.
  • Ability to handle food-grade materials and ingredients in compliance with safety regulations.
