The Role: Director - Food and Beverage

Responsibilities:



  • Ensures all Food and Beverage department employees consistently provide all guests with friendly, courteous and timely service.
  • Ensures that employee training and development is a priority with the focus on monitoring and motivating employees to achieve highest level of guest satisfaction.
  • Ensures that both food and beverage quality are maintained at a standard of excellence, and are expertly prepared and creatively presented.
  • Ensures that Food and Beverage revenues meet budget; paying particular attention to local catering sales and gourmet restaurant revenues and assist in promoting these areas.
  • Ensure that major cost areas remain within budget, paying particular attention to: payroll, food cost, beverage cost and supply cost.
  • Ensures that proper controls are in place and consistently adhered to concerning complete Food and Beverage revenue reports.
  • Reviews and approves weekly departmental work schedules to assure that they conform to respective volume forecasts and corresponding productivity standards, to avoid overtime, while providing proper coverage to give optimum service.
  • Verifies weekly beverage costs, with the objective not to exceed the budgeted cost.
  • Ensures that all menus are re-costed at least semi-annually.
  • Ensures that accurate monthly food, beverage, china, glass, silver and table linen inventories are completed on a timely basis.
  • Ensures that Food and Beverage employees work in a congenial atmosphere with particular attention to employee training and orientation.
  • Ensures good department communications through regular supervisory and employee meetings.
  • Maintains turnover rate not to exceed 40%.
  • Advises the Vice President and General Manager of any undue variances from established goals.
  • Exercises considerable judgement in determining priorities, managing projects and assignments, delegating work, and overall accomplishment of goals and tasks.
  • Directs the interviewing, selection and hiring of superior staff.
  • Manages the performance evaluation process.
  • Ensures that all employees receive appropriate training.
  • Ensures effective communication among and between all department staff.
  • Directs departmental reward, appreciation and recognition efforts.
  • Oversees the departmental safety program.
  • Manages the coaching, counseling, disciplining of staff as appropriate, up to and including termination.
  • Maintains relevant records and oversees the maintenance of records as appropriate for the department.
  • Ensures compliance with relevant laws and regulations as well as company policies and procedures.
  • Maintains up-to-date knowledge of industry and competition.
  • Ensures effective communication within the department and company.
  • Holds subordinates accountable for established performance expectations.
  • Motivates and develops staff; provides advice and guidance as appropriate.



ADDITIONAL FUNCTIONS:



  • Performs other duties as assigned.



Qualifications:



  • College degree in related field or equivalent experience required.
  • 5 - 7 years Food and Beverage management experience required, preferably in a 4-star quality hotel (300+ rooms) with annual food and beverage volume exceeding $15 million.
  • Must be proficient with Microsoft Office software.
  • Must possess excellent leadership skills with the ability to direct the workforce, provide support to staff, and delegate appropriately.
  • Must be an excellent team builder, motivator and mentor.
  • Must possess excellent written and oral communication skills.
  • Must be able to solve problems and deal with a variety of situations.
  • Must present an overall professional appearance.
  • Must be able to work weekends, holidays and nights as needed.
  • Must be able to successfully pass a background check.

Target Starting Salary: $130,000.00
