BASIC PURPOSE

This position assists with the supervision of staff, preparation and serving of meals, assisting with the lab instruction of the Culinary Arts students in the kitchen and cleaning/maintaining sanitary standards in the kitchen and cafeteria by performing the following duties.

ESSENTIAL DUTIES AND RESPONSIBILITIES

Culinary Arts Training Instructor Assignments



  1. Assists the Culinary Arts team with recruitment and promotion and conducting interviews for potential students.
  2. Assists with the coordination of teaching and instruction for CATP students
  3. Assists the manager with the program development, and management of the Culinary Training Classroom activities to help accomplish program goals and objectives.
  4. Instructs Students during the theory, lab and hands on training in the kitchen.
  5. Monitor students' performance to make suggestions for improvement and to ensure that they satisfy course standards, training requirements, and objectives.
  6. Maintain records and necessary documentation to support class-training and student progress.
  7. Maintain tracking record of all graduating class students; provide on-going mentorship with current and previous shelter clients.
  8. And other related duties as assigned by supervisor.


Lead Cook Assignments



  1. Leads all personnel assigned to the kitchen including volunteers during shift and/or in absence of the Food Services Manager.
  2. Assists the Food Services Manager with the lab instruction of Culinary Arts while students are in training in the kitchen.
  3. Assists the Food Services Manager with catering duties and driving the canteen when necessary.
  4. Provide meal service for any special event, i.e. Advisory Board meetings, Women's Auxiliary meetings, Christmas meals for volunteers and SAC Metro PR events.
  5. Prepare meals during his/her shifts.
  6. Trains staff and volunteers to assist in food preparation and storage under adverse conditions.
  7. Assists with storage and receipt of food goods received.
  8. Reports problems in writing (Incident report) to Food Services Manager.
  9. Assists the Manager with maintaining efficient and competent performance of all operations relating to the kitchen, i.e. food procurement, food preparation, food storage, sanitization of kitchen utensils and kitchen cleanliness.
  10. Ensures meal set up and cleans up including but not limited to dishwashing, cleansing, and sanitizing equipment and systematic cleaning of major appliances.
  11. Maintains a safe and sanitary environment for food preparation and storage under adverse conditions.
  12. Ensures safe, sanitary, nutritious and attractive food preparation (meals, snacks, special occasions, etc.).
  13. Schedules pick up of supplies and limited donations (e.g. food, Christmas related items, etc.).
  14. Researches and communicates different methods of minimizing food expenses (e.g. obtaining bids from various vendors, searching for best prices, etc.).
  15. Maintain a weekly schedule of assignments for the staff and volunteers as well as Alternative Sentencing participants (Community Hours Program).
  16. Develop weekly menus that are creative, nutritious and appealing making maximum use of donated foods and USDA commodities.
  17. Utilize USDA material to ensure proper inventory and meal productions.
  18. Conduct monthly physical inventory of kitchen food and supplies as well as maintain daily usage records to be submitted to the Manager.
  19. And other related duties as assigned by supervisor.


Supervisory Responsibilities



  1. This job assists with the supervisory responsibilities over the Cook II, and Kitchen Aid positions, community service clients, and food service volunteers, in the absence of the Food Services Manager.


KNOWLEDGE, SKILLS, ABILITIES AND OTHER QUALIFICATIONS REQUIREMENTS



  1. High school diploma or general education degree (GED); or one to three months related experience and/or training; or equivalent combination of education and experience. Three to five years working as a Cook II.
  2. Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.
  3. Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations.
  4. Must possess a valid California Class C Driver License, and ability to drive a Salvation Army vehicle
  5. Must be 21 years or older.
  6. Complete The Salvation Army vehicle course training.


PHYSICAL REQUIREMENTS



  1. While performing the duties of this job, the employee is frequently exposed to wet and/or humid conditions. The employee is occasionally exposed to moving mechanical parts, fumes or airborne particles, extreme cold, and extreme heat. The noise level in the work environment is usually moderate.
  2. While performing the duties of this job, the employee is regularly required to use hands to finger, handle, or feel and taste or smell.
  3. Ability to sit, walk, stand, bend, squat, climb, kneel, and twist on an intermittent or sometimes continuous basis
  4. Ability to grasp, push, and/or pull objects
  5. Ability to reach overhead
  6. Ability to operate telephone
  7. Ability to regularly lift/move up to 25 lbs, and frequently lift/move up to 100 lbs.
  8. Ability to operate a computer
  9. Ability to process written, visual, and/or verbal information
  10. Ability to operate basic office equipment and tools PC, Fax Machine, Telephone, Calculator, Copier, Printer.
